Ingredients

  • 1 cup almond milk (or any plant-based milk)
  • 3 tablespoons chia seeds
  • 1 tablespoon instant coffee granules (or brewed coffee) Adjust quantity for desired coffee strength
  • 2 tablespoons maple syrup Adjust to taste
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Optional Toppings

  • fresh fruits, nuts, or granola Use any desired toppings for serving

Instructions
 

Preparation

  • In a bowl, combine the almond milk, chia seeds, instant coffee granules, maple syrup, vanilla extract, and a pinch of salt.
  • Whisk the mixture thoroughly to ensure the coffee granules and chia seeds are evenly distributed.
  • Let the mixture sit for about 5 minutes, then stir it again to break up any clumps of chia seeds.
  • Cover the bowl with plastic wrap or transfer the mixture to individual jars.

Chilling

  • Place the bowl or jars in the refrigerator and let it chill for at least 4 hours or overnight.

Serving

  • When ready to serve, give the pudding a good stir and add your favorite toppings.

Notes

For a richer coffee flavor, consider adding more instant coffee or using strong brewed coffee. Adjust maple syrup for sweetness and stir in almond milk if the pudding thickens too much. Experiment with flavors such as cocoa powder or spices for variations.
