Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, melted
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tablespoon instant coffee granules

Add-ins

  • 1 cup chocolate chips Semi-sweet chocolate chips preferred

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the melted butter, sugar, and brown sugar. Stir until smooth.
  • Add the egg and instant coffee granules. Mix until fully incorporated.
  • In a separate bowl, whisk together flour, cocoa powder, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet mixture and stir until just combined.
  • Fold in the chocolate chips.
  • Drop dollops of dough onto the prepared baking sheet, leaving space in between.

Baking

  • Bake for 10 to 12 minutes until the cookies are set but soft in the center.
  • Cool on the baking sheet for a few minutes, then transfer to a wire rack.

Notes

For best results, use quality instant coffee and consider letting the dough rest in the refrigerator for 30 minutes before baking. Store cooled cookies in an airtight container at room temperature for up to one week.
