Instructions
In a bowl or jar, mix together rolled oats, chia seeds, and a pinch of salt.
Add plant-based milk, freshly brewed espresso, maple syrup, and vanilla extract. Stir until well combined.
Fold in plant-based yogurt for added creaminess.
Cover and refrigerate overnight or for at least 4 hours.
In the morning, prepare the sweet coffee cream by whisking together maple syrup, instant coffee, and boiling water until creamy.
Stir the sweet coffee cream into your oats before serving. Enjoy with your favorite toppings!
