Ingredients
  

  • 1/2 cup rolled oats
  • 1 tablespoon chia seeds
  • 1 pinch salt
  • 1/4 cup freshly brewed espresso or cold brew or instant coffee
  • 1/2 cup plant-based milk
  • 1 tablespoon maple syrup
  • 1/4 teaspoon vanilla extract
  • 2-3 tablespoons plant-based yogurt
  • 2 teaspoons maple syrup for sweet coffee cream
  • 2 teaspoons instant coffee for sweet coffee cream
  • 2 teaspoons boiling water for sweet coffee cream

Instructions
 

  • In a bowl or jar, mix together rolled oats, chia seeds, and a pinch of salt.
  • Add plant-based milk, freshly brewed espresso, maple syrup, and vanilla extract. Stir until well combined.
  • Fold in plant-based yogurt for added creaminess.
  • Cover and refrigerate overnight or for at least 4 hours.
  • In the morning, prepare the sweet coffee cream by whisking together maple syrup, instant coffee, and boiling water until creamy.
  • Stir the sweet coffee cream into your oats before serving. Enjoy with your favorite toppings!

Notes
