Preparation

  • Start by preparing your ingredients: dice the tomatoes, chop the onion, and finely chop the chili peppers.
  • In a mixing bowl, combine the diced tomatoes, minced onion, and chopped peppers.
  • Add the fresh cilantro to the bowl.
  • Pour in the lime juice and season with salt according to your taste preference.
  • If you prefer a smoother texture, drizzle in some olive oil.
  • Mix all the ingredients thoroughly until well-combined.
  • Let it sit for at least 15-30 minutes to allow flavors to meld together.

Serving

  • Once ready, taste and adjust any seasoning as required.
  • Serve Colombian Aji as a topping for grilled meats or as a dip for empanadas and fried plantains.

Notes
