Instructions
Heat olive oil in a large skillet over medium-high heat. Brown the beef chunks on all sides, about 5 to 7 minutes.
Transfer the browned beef into your crockpot.
Add carrots, potatoes, onion, and garlic into the crockpot.
In a separate bowl, mix beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper. Stir until well combined.
Pour the sauce over the beef and vegetables in the crockpot.
Cover and cook on LOW for 6 to 8 hours or on HIGH for 4 to 5 hours.
Check seasoning before serving. Garnish with fresh herbs if desired.
