Ingredients
  

  • 2 lbs beef chuck, cut into 1-inch pieces
  • 4 pieces carrots, sliced
  • 4 pieces potatoes, diced
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 Tbsp tomato paste
  • 1 Tbsp Worcestershire sauce
  • 1 tsp thyme
  • to taste salt and pepper
  • 2 Tbsp olive oil

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Brown the beef chunks on all sides, about 5 to 7 minutes.
  • Transfer the browned beef into your crockpot.
  • Add carrots, potatoes, onion, and garlic into the crockpot.
  • In a separate bowl, mix beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper. Stir until well combined.
  • Pour the sauce over the beef and vegetables in the crockpot.
  • Cover and cook on LOW for 6 to 8 hours or on HIGH for 4 to 5 hours.
  • Check seasoning before serving. Garnish with fresh herbs if desired.
