  • 1 cup old-fashioned oats Use certified gluten-free if needed.
  • 1/2 tsp baking powder
  • Pinch sea salt
  • 1 small/medium banana Use a fully ripe banana for sweetness.
  • 2 Tbsp cashew butter Can substitute with almond or sunflower seed butter.
  • 1 cup almond milk Dairy-free option.
  • 1/2 Tbsp maple syrup Adjust for desired sweetness.
  • 1 Tbsp dark chocolate chips
  • Handful dark chocolate chips (for topping)
  • 1 Tbsp cashew butter (for the center)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a blender, combine the old-fashioned oats, baking powder, sea salt, banana, cashew butter, almond milk, and maple syrup. Blend until smooth and creamy.
  • Reserve 3 tablespoons of the blended mixture and set aside.
  • Pour the remaining mixture into an oven-safe baking dish.
  • Stir dark chocolate chips into the batter until evenly distributed.
  • Add 1 tablespoon of cashew butter in the center of the dish.
  • Pour the reserved batter on top and sprinkle additional dark chocolate chips.

Baking

  • Bake for 30-35 minutes for a gooey texture, or an additional 10 minutes for a firmer center.

Serving

  • Allow to cool for a few minutes, then slice or scoop into bowls.
  • Enjoy warm, with toppings like maple syrup, sliced bananas, or yogurt.
