Cookie Monster Cinnamon Rolls

Ingredients
  

Dough Ingredients

  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 1/4 cups milk, warmed
  • 1/4 cup unsalted butter, melted
  • 1 large egg

Filling Ingredients

  • 1/2 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 1/2 cup mini chocolate chips

Topping Ingredients

  • 1/4 cup blue cookie frosting
  • 1/4 cup colorful sprinkles

Instructions
 

Prepare the Dough

  • In a large mixing bowl, combine 2 cups of flour, sugar, yeast, and salt. Mix well.
  • In a separate bowl, whisk together the warm milk, melted butter, vanilla extract, and egg until smooth.
  • Pour the wet ingredients into the flour mixture and mix until combined.
  • Gradually add the remaining flour until the dough starts to pull away from the sides of the bowl.
  • Turn the dough out onto a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.
  • Place the kneaded dough in a greased bowl, cover it with a clean towel, and let it rise in a warm place for about 1 hour or until doubled in size.

Make the Filling and Roll

  • After the dough has risen, punch it down and roll it out on a floured surface into a rectangle about 1/4 inch thick.
  • In a small bowl, mix the brown sugar and cinnamon together. Sprinkle this mixture evenly over the rolled-out dough.
  • Evenly distribute the mini chocolate chips across the dough.
  • Starting from one edge, roll the dough tightly into a log. Pinch the seam to seal.
  • Cut the log into 12 equal rolls. Arrange the rolls in a greased baking dish, spacing them slightly apart.
  • Cover the rolls again with a towel and let them rise for another 30 minutes.

Bake the Rolls

  • Preheat your oven to 350°F (175°C).
  • Bake the rolls for 20-25 minutes or until they turn golden brown and are cooked through.
  • Once baked, remove the rolls from the oven and let them cool slightly.
  • Drizzle the blue cookie frosting over the warm rolls and finish with colorful sprinkles.
