  • 1 cup cooked chicken, shredded Use leftover or rotisserie chicken for convenience.
  • 1/2 cup wild rice, uncooked
  • 1 large onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups chicken broth Use high-quality or homemade for better flavor.
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • to taste salt
  • to taste pepper

Preparation

  • Melt the butter in a large pot over medium heat.
  • Add the diced onion, carrots, and celery. Cook for about 5 to 7 minutes until softened.
  • Stir in the shredded chicken and uncooked wild rice. Sprinkle in the thyme.

Cooking

  • Pour in the chicken broth and bring to a rolling boil.
  • Reduce the heat to low and let the soup simmer for about 45 minutes, or until the wild rice is tender.
  • Add the heavy cream and season with salt and pepper to taste. Simmer for another 10 minutes.

Serving

  • Ladle the soup into bowls. Optionally, garnish with fresh parsley or thyme.
