  • 1.5 pounds Yukon gold potatoes Preferred for their creamy texture and ability to hold shape.
  • 0.5 units yellow onion
  • 1.5 teaspoons salt, divided Use 1 teaspoon for par-boiling and the rest for seasoning.
  • 1.5 tablespoons olive oil, divided Use 1/2 tablespoon for browning the corned beef and the rest for sautéing.
  • 1.5 cups chopped cooked corned beef Can use leftover corned beef.
  • 1 tablespoon butter
  • 0.5 teaspoon freshly cracked black pepper
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon smoked paprika

Instructions
 

Preparation

  • Begin by washing, peeling, and dicing the Yukon gold potatoes into small cubes. Set the diced onion aside.
  • Place the diced potatoes in a large pot, cover with water, and add 1 teaspoon salt. Bring to a boil, then reduce heat and par-boil for about 5 minutes until slightly tender. Drain and set aside.

Cooking

  • Heat a large skillet over medium heat and add 1/2 tablespoon olive oil. Cook the corned beef for about 5-6 minutes until browned. Remove from skillet.
  • In the same skillet, add 1 tablespoon of olive oil and the butter. Once melted, sauté the diced onion for approximately 2 minutes until transparent.
  • Stir in the drained potatoes, cooking undisturbed for about 4-5 minutes to achieve a crispy texture.
  • Add the remaining salt, black pepper, garlic powder, and smoked paprika. Mix well and cook for another 5-7 minutes.
  • Return the browned corned beef and cook for 2-3 more minutes until heated through and combined.

Serving

  • Serve hot, garnished with fresh herbs like sliced green onions or parsley.

Notes
