chopped par-cooked potatoes

chopped cooked corned beef
to taste

Instructions
Prep your ingredients by dicing the onion and green bell pepper, and chopping the potatoes if not already done.
Heat a large cast iron pan over medium heat.
Melt the butter in the pan, coating the bottom evenly.
Sauté the onion and green bell pepper for about 7-8 minutes until soft and slightly caramelized.
Add the par-cooked potatoes and chopped corned beef to the pan. Spread evenly.
Cook undisturbed for about 5 minutes to form a crust, then flip portions to brown the other side.
Season with salt and pepper. If using green onions, mix them in.
Serve hot, optionally with poached or fried eggs on top.
