Ingredients
  

  • 1 large onion finely diced
  • 1 large green bell pepper finely diced
  • 6 tablespoons unsalted butter
  • 3 cups chopped par-cooked potatoes
  • 4 cups chopped cooked corned beef
  • to taste salt
  • to taste pepper

Instructions
 

  • Prep your ingredients by dicing the onion and green bell pepper, and chopping the potatoes if not already done.
  • Heat a large cast iron pan over medium heat.
  • Melt the butter in the pan, coating the bottom evenly.
  • Sauté the onion and green bell pepper for about 7-8 minutes until soft and slightly caramelized.
  • Add the par-cooked potatoes and chopped corned beef to the pan. Spread evenly.
  • Cook undisturbed for about 5 minutes to form a crust, then flip portions to brown the other side.
  • Season with salt and pepper. If using green onions, mix them in.
  • Serve hot, optionally with poached or fried eggs on top.
