  • 1 cup cottage cheese Use high-quality cottage cheese for best flavor.
  • 1 can chickpeas, drained and rinsed Pat dry with a paper towel for less watery salad.
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced Add close to serving time to keep crisp.
  • 1 medium bell pepper (any color), diced
  • 1 small red onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • to taste Salt and pepper Adjust seasoning gradually.
  • to taste Fresh parsley or cilantro, chopped (optional) Add for garnish.

Preparation

  • In a large bowl, combine the cottage cheese and chickpeas. Gently mix them together until combined.
  • Add the halved cherry tomatoes, diced cucumber, bell pepper, and chopped red onion to the bowl.
  • In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over the salad mixture and toss everything together until evenly coated.
  • If using, add the chopped parsley or cilantro and give the salad a final gentle toss.
  • Taste and adjust seasoning as needed before serving.

Notes

This salad can be served on its own, on a bed of leafy greens, or with whole-grain pita bread. It stays fresh in the refrigerator for about three days; store dressing separately if desired.
