  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 cup cottage cheese Use high-quality, fresh cottage cheese for best flavor
  • 1 medium cucumber, diced
  • 1 each bell pepper, diced (any color)
  • 1 small red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 2 cups mixed greens or spinach Can substitute with any salad greens

Dressing and Seasoning

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice Freshly squeezed for best flavor
  • to taste Salt and pepper
  • to taste Fresh herbs (such as parsley or cilantro), chopped Optional, for added flavor

Instructions
 

Preparation

  • In a large mixing bowl, combine the drained chickpeas and cottage cheese. Stir gently to combine.
  • Add the diced cucumber, bell pepper, red onion, and cherry tomatoes to the bowl.
  • Sprinkle the mixed greens or spinach over the top.
  • Drizzle the olive oil and lemon juice over the salad. Season with salt and pepper.
  • Gently toss the salad until all ingredients are well coated.
  • Taste and adjust seasoning if needed, adding more salt, pepper, or lemon juice as desired.
  • Serve immediately or let it sit for a few minutes to allow the flavors to meld.
