  • 1 cup cottage cheese Use whole or low-fat without fillers for best flavor and texture.
  • 2 cups all-purpose flour Spoon into the measuring cup and level off to avoid dry dough.
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 large egg
  • 1 tablespoon olive oil or melted butter
  • 1/4 teaspoon baking soda For the tops of the bagels.
  • sesame seeds or poppy seeds Optional, for topping.

Preparation

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine the cottage cheese, egg, and olive oil. Mix until smooth.
  • In a separate bowl, whisk together the flour, baking powder, salt, and sugar.
  • Gradually add the dry ingredients to the cottage cheese mixture. Stir until well combined.
  • Lightly flour your work surface and knead the dough for a few minutes until it becomes smooth and elastic.
  • Divide the dough into four equal parts. Roll each piece into a ball and poke a hole through the center with your finger.
  • Stretch the hole gently to make it a bit larger.

Baking

  • Place the shaped bagels on the prepared baking sheet. Optionally, brush the tops with water and sprinkle sesame seeds or poppy seeds.
  • In a small bowl, mix baking soda with a tablespoon of water, then brush over the tops of the bagels.
  • Bake for 20-25 minutes or until golden brown.
  • Let the bagels cool slightly on a wire rack before serving.

Notes

To keep bagels fresh, store them in an airtight container for up to two days, or freeze them for up to three months. Reheat in a toaster oven or conventional oven for best results.
