Ingredients
  

  • 1/2 cup unsalted butter
  • 1/2 cup cottage cheese
  • 1 tsp vanilla extract
  • 1 cup brown sugar packed
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • Mash the ripe bananas in a large bowl until smooth. Stir in the cottage cheese, melted butter, brown sugar, eggs, and vanilla extract until combined.
  • In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix.
  • Pour the batter into the prepared loaf pan and spread it out evenly.
  • Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. If the top starts browning too quickly, cover it with foil.
  • Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
