Instructions
Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
Mash the ripe bananas in a large bowl until smooth. Stir in the cottage cheese, melted butter, brown sugar, eggs, and vanilla extract until combined.
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix.
Pour the batter into the prepared loaf pan and spread it out evenly.
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. If the top starts browning too quickly, cover it with foil.
Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
