  • 1 cup cottage cheese Use a smooth variety for best consistency
  • 1 cup dark chocolate chips or chocolate squares, melted Melt in the microwave or double boiler
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup honey or maple syrup Adjust sweetness to taste
  • 1 teaspoon vanilla extract
  • a pinch salt

Preparation

  • Melt the chocolate in a microwave-safe bowl in short bursts, stirring in between until completely melted. Allow it to cool slightly.
  • In a blender, combine the cottage cheese, melted chocolate, cocoa powder, honey or maple syrup, vanilla extract, and a pinch of salt.
  • Blend until the mixture is smooth and creamy. Taste and adjust sweetness if needed.
  • Scrape down the sides of the blender to ensure everything is well combined.
  • Spoon the mousse into serving dishes and refrigerate for at least 30 minutes.
  • Before serving, stir and check the texture. Add a splash of milk or cream for a lighter mousse if desired.
  • Serve chilled and enjoy every chocolatey spoonful.

Notes

You can layer the mousse with fresh berries, crushed nuts, or whipped cream for added flavor and texture. Refrigerate tightly covered for up to three days.
