  • 2 teaspoons vanilla extract
  • 2 tablespoons melted butter or coconut oil Use coconut oil for a dairy-free version.
  • Optional chopped nuts or raisins Add for extra texture.

Preparation

  • In a microwave-safe mug, combine the cottage cheese, flour, sugar, baking powder, salt, and ground cinnamon. Mix well until there are no lumps.
  • Add the egg, vanilla extract, and melted butter to the mug. Stir until everything is well combined. The batter should be smooth and thick.

Cooking

  • Microwave on high for about 1-2 minutes, starting to check at the 1-minute mark. The cake is ready when it has risen and feels firm to the touch.
  • Let the mug cake cool for a few minutes before enjoying it straight from the mug or transferring it onto a plate.

Notes
