  • 1 cup cottage cheese
  • 4 large eggs Use organic for better flavor
  • 1/2 cup grated cheese Cheddar, mozzarella, or your choice
  • 1/2 cup chopped vegetables Spinach, bell peppers, onions, etc.
  • to taste Salt and pepper
  • 1/4 teaspoon garlic powder Optional
  • to taste Fresh herbs Optional

Preparation

  • Preheat your oven to 350°F (175°C) and grease a muffin tin or use silicone muffin cups.
  • In a large mixing bowl, whisk together the cottage cheese and eggs until smooth.
  • Stir in the grated cheese, chopped vegetables, salt, pepper, and garlic powder if using. Mix well to combine all ingredients.
  • Carefully pour the mix into the prepared muffin tin, filling each cup about three-quarters full.

Baking

  • Bake in the preheated oven for 20-25 minutes, or until the egg bites puff up and turn golden on top.
  • Remove from the oven and let them cool for a few minutes before gently removing them from the tin.
  • Enjoy warm or allow them to cool completely for storage.

Notes
