  • 6 large eggs
  • 1 cup cottage cheese Use smooth cottage cheese for better texture.
  • 1 cup shredded cheese (like cheddar or mozzarella) Choose your favorite type of cheese.
  • 1 cup chopped vegetables (bell peppers, spinach, onion, etc.) Mix and match your favorite veggies.
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Optional Garnish

  • to taste fresh herbs (parsley or chives) For garnish before serving.

Preparation

  • Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or olive oil.
  • In a large bowl, whisk together the eggs until fully combined. Add the cottage cheese and mix until smooth.
  • Stir in the shredded cheese, chopped vegetables, salt, and black pepper until well incorporated.

Baking

  • Pour the egg mixture evenly into the greased muffin tin, filling each cup about three-quarters full.
  • If using fresh herbs, sprinkle them on top before baking.
  • Place the muffin tin in the preheated oven and bake for about 20-25 minutes or until the egg bites are set and golden on top.
  • Once baked, remove from the oven and let cool for a few minutes before gently removing the egg bites from the mold.
