  • 1 cup cottage cheese Use full-fat for creamier texture, or low-fat for fewer calories.
  • 1 large egg
  • 1 cup all-purpose flour Can substitute with whole wheat or gluten-free flour.
  • 1 teaspoon baking powder Helps to leaven the flatbread.
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil Can adjust based on skillet type.

Optional Add-ins

  • Fresh herbs (chives or parsley) Chop finely and mix into the dough.
  • Ground black pepper Add to taste.

Preparation

  • Preheat your skillet over medium heat.
  • In a large bowl, combine the cottage cheese and egg. Stir until well mixed.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the flour mixture to the cottage cheese mixture, stirring to form a soft dough.
  • Turn the dough onto a floured surface and knead gently for about 1 minute until smooth.
  • Divide the dough into equal portions and roll each into a ball, flattening gently into discs about 1/2 inch thick.

Cooking

  • Place the flattened dough onto the preheated skillet.
  • Cook for about 2-3 minutes on each side until golden brown and cooked through.
  • Remove from the skillet and let cool slightly on a wire rack. Repeat with the remaining dough.

Notes
