  • 2 cups cottage cheese
  • 1/2 cup granulated sugar
  • Zest of 1 lemon Use a fresh lemon for better flavor.
  • 1/4 cup fresh lemon juice Use fresh lemon juice for the best taste.
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream Chill before whipping.
  • 1 tablespoon gelatin powder Soak in cold water before using.
  • 3 tablespoons cold water For soaking gelatin.

Preparation

  • Soak the gelatin in cold water in a small bowl for about 5 minutes until it becomes soft and spongy.
  • In a blender, combine cottage cheese, granulated sugar, lemon zest, lemon juice, and vanilla extract. Blend until smooth.
  • Heat a small saucepan over low heat and add the soaked gelatin. Stir gently until completely dissolved without boiling.
  • Slowly pour the dissolved gelatin into the blended cottage cheese mixture while blending on low speed. Blend briefly to combine.
  • In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cottage cheese mixture using a spatula.
  • Transfer the mixture into serving dishes or cups, cover with plastic wrap, and refrigerate for at least 2 hours to set.

Notes
