  • 1 tablespoon butter or oil For cooking the omelette

  • to taste fresh herbs (like chives or parsley)
  • to taste shredded cheese

Instructions
 

Preparation

  • Crack the eggs into a bowl and whisk them until thoroughly mixed. Add salt and pepper to taste.
  • Fold in the cottage cheese, making sure it is evenly distributed in the egg mixture.
  • If using, prepare your diced vegetables by chopping them into small pieces.

Cooking

  • Heat a non-stick skillet over medium heat and add the butter or oil. Allow it to melt and coat the bottom of the pan.
  • Pour the egg and cottage cheese mixture into the skillet and allow it to cook for a minute without stirring.
  • If desired, sprinkle your diced vegetables and fresh herbs on one half of the omelette.
  • Cook for another 3-4 minutes, or until the edges begin to lift and the bottom turns golden brown.
  • Carefully fold the omelette in half, covering the toppings if added.
  • Let it cook for another minute before sliding it onto a plate.
