  • 2 cups cottage cheese Use whole milk or low-fat for best texture.
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour Can substitute with gluten-free flour.
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sour cream
  • 1/4 cup melted butter
  • Zest of 1 lemon
  • as desired fresh fruit or jam for topping Optional, for serving.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cottage cheese, eggs, sugar, and vanilla extract. Beat the mixture until smooth.
  • Add the flour, baking powder, and salt. Stir until well incorporated.
  • Gently fold in the sour cream, melted butter, and lemon zest until uniform.
  • Grease a pie dish or springform pan with butter or non-stick spray.
  • Pour the cottage cheese mixture into the prepared dish, smoothing the top with a spatula.
  • Bake in the preheated oven for 40 to 45 minutes or until the center is set and the top is lightly golden.
  • Let the pie cool to room temperature before slicing.

Notes
