  • 1 cup cottage cheese Drain well to avoid excess moisture.
  • 1 cup shredded mozzarella cheese
  • 1 cup all-purpose flour For gluten-free, substitute with a gluten-free flour blend.
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 cup marinara sauce or your favorite tomato sauce.
  • to taste assorted toppings (bell peppers, onions, olives, pepperoni) Customize to your preference.
  • to grease olive oil For greasing the baking sheet.
  • for garnish fresh basil leaves

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and grease a baking sheet with olive oil.
  • In a large bowl, combine the cottage cheese, mozzarella cheese, flour, baking powder, salt, garlic powder, oregano, and black pepper. Mix until well combined.
  • Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, spacing them a few inches apart.
  • Use your thumb to create a small indentation in the center of each bite to hold the sauce and toppings.
  • Add a small spoonful of marinara sauce to each indented bite.
  • Top with your favorite toppings, distributing them evenly across all the bites.

Baking

  • Bake in the preheated oven for about 15-20 minutes, or until the tops are golden brown and the cheese is bubbling.
  • Remove from the oven and allow them to cool slightly.

Serving

  • Garnish with fresh basil leaves before serving.
