  • 2 cups cottage cheese Drained of excess liquid
  • 1 cup shredded cheese Cheddar or your favorite kind
  • 1/2 cup diced tomatoes Drained
  • 1/4 cup diced green chiles Canned
  • 1/4 cup diced onion
  • 2 cloves garlic Minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • for garnish Fresh cilantro Optional

Preparation

  • Start by draining any excess liquid from the cottage cheese to ensure a thick dip consistency.
  • In a mixing bowl, combine the cottage cheese, shredded cheese, diced tomatoes, green chiles, onion, garlic, chili powder, cumin, salt, and pepper. Mix everything until it forms a uniform blend.

Cooking

  • Transfer the mixture to a small baking dish if you prefer to serve it warm.
  • Preheat your oven to 350°F (175°C). Bake the dip for about 20 minutes or until the cheese melts and the dip is bubbly.
  • Alternatively, if you want to serve it cool, store the dip in the refrigerator for about 30 minutes before serving.

Serving

  • Before serving, garnish with fresh cilantro if desired.
  • Serve warm with tortilla chips, vegetable sticks, or hearty crackers, or use it as a spread on sandwiches or wraps.

Notes

Store any leftover dip in an airtight container in the refrigerator. It can last for about 3 to 5 days. Reheat in short intervals in the microwave, stirring frequently to prevent burning. If thickening occurs, mix in a splash of milk or sour cream to restore creaminess.
