  • 2 cups fresh spinach, chopped Choose fresh for the best flavor
  • 1 cup cottage cheese Can be blended for a smoother texture
  • 1 cup Greek yogurt Adds creaminess and tanginess
  • 1 cup grated cheddar cheese
  • 1/2 cup cream cheese, softened
  • 2 cloves garlic, minced For added flavor
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • to taste Salt and pepper Adjust according to preference
  • 1/2 cup grated Parmesan cheese For topping
  • 1 tablespoon olive oil For sautéing
  • to taste Fresh parsley, chopped For garnish

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat the olive oil over medium heat.
  • Add the minced garlic and sauté until fragrant, about 1 minute.
  • Stir in the chopped spinach and cook until wilted, approximately 3-4 minutes.
  • In a mixing bowl, combine the cottage cheese, Greek yogurt, cream cheese, cheddar cheese, onion powder, garlic powder, salt, and pepper. Mix until smooth.
  • Add the sautéed spinach and garlic to the cheese mixture, stirring well to combine all ingredients.
  • Transfer the mixture to a baking dish and sprinkle the grated Parmesan cheese on top.
  • Bake for about 20-25 minutes, or until the dip is bubbly and golden on top.
  • Remove from the oven and let it cool slightly before serving.

Notes

This dip can be served warm or cold. For a festive look, sprinkle fresh parsley on top before serving.
