For the Wraps

  • 4 large tortillas (whole wheat or your choice) Choose whole grain for added fiber or gluten-free if needed.

For the Filling

  • 1 cup cottage cheese Use plain or flavored cottage cheese for variation.
  • 1 cup fresh spinach, chopped
  • 1 small cucumber, diced
  • 1 medium bell pepper, chopped Any color bell pepper can be used.
  • 1 medium carrot, grated
  • ½ whole avocado, sliced
  • Salt and pepper, to taste Adjust seasoning as preferred.
  • Optional: herbs, such as dill or chives Enhance flavor with fresh herbs.
  • Optional: your favorite dressing or sauce for drizzling

Preparation

  • Prepare your vegetables by washing and chopping them as needed.
  • Lay a tortilla flat on a clean surface.
  • Spread a generous amount of cottage cheese onto the center of the tortilla.
  • Arrange the chopped spinach, diced cucumber, bell pepper, grated carrot, and sliced avocado on top of the cottage cheese.
  • Season with salt, pepper, and any additional herbs you prefer.
  • Drizzle your favorite dressing or sauce over the veggies if desired.
  • Carefully fold the sides of the tortilla inward, then roll it tightly from the bottom up to create a wrap.
  • Repeat this process with the remaining tortillas and fillings.
  • Cut each wrap in half diagonally and serve immediately, or prepare them for later.

Notes
