Cowboy Butter Ingredients

  • 1/2 cup salted butter, softened Quality butter enhances the flavor.
  • 2 tablespoons brown or grainy mustard
  • 2 tablespoons chopped parsley Fresh parsley adds brightness.
  • 4 teaspoons fresh thyme
  • 2 teaspoons lemon juice Enhances the flavors.
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • pinch cayenne pepper Adjust to taste.
  • pinch red chili flakes Adjust to taste.

Pasta and Cream Ingredients

  • 1 pound spaghetti Cook until al dente.
  • 1 1/2 cups heavy cream
  • 1 teaspoon lemon juice
  • 1/8 teaspoon garlic salt
  • pinch red pepper flakes Adjust to taste.
  • chopped parsley for garnish Adds color and flavor.

Instructions
 

Preparation

  • In a mixing bowl, blend the softened butter with brown mustard, chopped parsley, fresh thyme, lemon juice, smoked paprika, kosher salt, black pepper, cayenne, and red chili flakes until well combined.
  • If time allows, refrigerate the mixture for two hours or overnight to enhance the flavors.

Cooking Pasta

  • Bring a large pot of lightly salted water to a boil.
  • Cook the spaghetti according to package instructions until al dente, reserving 1/4 cup of pasta water before draining.

Making the Sauce

  • In a large saucepan over medium-low heat, melt the remaining butter.
  • Add heavy cream, 1 teaspoon of lemon juice, garlic salt, and red pepper flakes to the saucepan.
  • Heat the mixture until steaming, avoiding boiling.

Combining and Serving

  • Toss the drained spaghetti into the sauce, mixing gently to coat.
  • If needed, add some reserved pasta water to adjust the consistency.
  • Serve in bowls, garnished with additional chopped parsley.
