  • 3/4 pound extra lean ground beef Opt for extra lean to keep it healthier.
  • 2 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 1 can (15-ounce) chopped stewed tomatoes
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/8 teaspoon cayenne pepper Adjust based on heat preference.
  • 1 can (15-ounce) pinto beans, rinsed and drained
  • 1/2 teaspoon salt Add according to taste.

Preparation

  • Heat a large saucepan over medium heat.
  • Add the extra lean ground beef, minced garlic, and chopped onion.
  • Cook for about 10 minutes, stirring occasionally, until the beef is browned and the onions are softened.
  • Spoon out any excess fat.

Cooking

  • Stir in the chopped stewed tomatoes and beef broth.
  • Sprinkle in the chili powder, ground cumin, dried oregano, and cayenne pepper.
  • Mix well to coat meat and vegetables with spices.
  • Reduce heat to low and let it simmer for one hour, stirring occasionally.
  • Add the rinsed and drained pinto beans and sprinkle in the salt.
  • Cook for an additional 15 minutes.
