Ingredients
  

Seafood Ingredients

  • 1 pound crab meat Fresh crab meat is preferred.
  • 1 pound shrimp, peeled and deveined Use fresh shrimp or thaw frozen shrimp before use.
  • 4 cups seafood stock Homemade stock is recommended for superior flavor.
  • 1 cup heavy cream For a lighter version, you can reduce the cream and increase stock.

Vegetables and Aromatics

  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 1 carrot, diced carrot, diced
  • 4 cloves garlic, minced

Thickening and Seasoning

  • 1/4 cup all-purpose flour Sprinkle over vegetables to thicken the bisque.
  • 1 tablespoon tomato paste
  • 2 tablespoons olive oil For sautéing the vegetables.
  • 1 teaspoon paprika
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste Salt and pepper, to taste
  • 1 tablespoon lemon juice Brightens the flavors.

Garnish

  • 1 tablespoon fresh parsley, chopped For garnish before serving.

Instructions
 

Preparation

  • In a large pot, heat olive oil over medium heat. Add the diced onion, celery, and carrot. Sauté until soft and fragrant, about 5 minutes.
  • Stir in the minced garlic and cook for another minute.
  • Sprinkle the flour over the sautéed vegetables. Stir continuously for a couple of minutes to cook the flour slightly.

Cooking

  • Add the tomato paste, paprika, and Old Bay seasoning. Mix everything together and pour in the seafood stock. Stir well to combine and bring to a simmer.
  • Let the mixture simmer for about 15 minutes, allowing the flavors to meld and thicken slightly.
  • Add the heavy cream, stirring continuously, then add the crab meat and shrimp, cooking for another 5 to 7 minutes, or until the shrimp turns pink and the crab is heated through.
  • Season with salt, pepper, and lemon juice to taste. Remove from heat and let it sit for a few minutes before serving.

Serving

  • Garnish with fresh parsley just before serving.
