Ingredients
  

Shrimp

  • 1 pound large shrimp, peeled and deveined

Crab Filling

  • 1 cup crab meat, cooked and flaked ensure it's properly drained if canned
  • 1/2 cup cream cheese, softened can substitute with Greek yogurt for a healthier option
  • 1/4 cup mayonnaise
  • 1/4 cup breadcrumbs
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon Old Bay seasoning can add more or spices of choice
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish) for serving

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine cream cheese, mayonnaise, breadcrumbs, Dijon mustard, minced garlic, lemon juice, and Old Bay seasoning. Mix until smooth.
  • Gently fold in flaked crab meat. Season with salt and pepper to taste.
  • Take the peeled shrimp and butterfly them by slicing through the back, ensuring not to cut all the way through. Open them like a book.
  • Place a generous spoonful of the crab mixture onto each butterflied shrimp.
  • Arrange the stuffed shrimp on a baking dish. Lightly drizzle with olive oil for flavor.

Baking

  • Bake in the preheated oven for about 15 to 20 minutes or until the shrimp are pink and opaque and the topping is golden.
  • Once done, remove from the oven and let them cool slightly before serving.

Notes

To elevate presentation, arrange the stuffed shrimp on a platter with fresh parsley and consider lemon wedges for serving. You can also pair with grilled asparagus or roasted vegetables.
