  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 3/4 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  • In a large mixing bowl, cream together the softened unsalted butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually mix the dry ingredients into the creamed mixture, alternating with the milk, ensuring to not overmix.
  • Gently fold in the cranberries.

Baking

  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for 30-35 minutes, checking for doneness with a toothpick inserted in the center.
  • Once baked, allow the cake to cool in the pan for a bit before transferring to a wire rack.
