Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup orange juice Use fresh orange juice for best flavor.
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup fresh cranberries Fresh or frozen cranberries can be used.
  • Zest of 1 orange Use the zest for an enhanced flavor.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a loaf pan with butter or non-stick spray.
  • In a mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt.
  • In another bowl, whisk together the orange juice, vegetable oil, and eggs until well combined.
  • Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  • Fold in the fresh cranberries and orange zest.
  • Pour the batter into the prepared loaf pan, smoothing the top.

Baking

  • Place the pan in the preheated oven and bake for 60-70 minutes.
  • Check for doneness with a toothpick inserted into the center; it should come out clean.
  • Allow the bread to cool in the pan for 10-15 minutes, then transfer it to a cooling rack.

Notes
