Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup orange juice freshly squeezed if possible
  • Zest of 1 orange
  • 2 large eggs

Add-ins

  • 1 cup fresh or frozen cranberries, chopped
  • 1/2 cup walnuts or pecans, chopped optional

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set it aside.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, beat the softened butter until creamy. Then mix in the orange juice and orange zest.
  • Add the eggs one at a time, mixing well after each addition.
  • Gradually combine the wet mixture with the dry ingredients, stirring until just blended. Be careful not to overmix.
  • Fold in the cranberries and nuts if you’re using them.
  • Pour the batter into the prepared loaf pan, smoothing the top.

Baking

  • Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the loaf to cool in the pan for 10 minutes, then remove it and let it cool completely on a wire rack.

Notes

For serving, enjoy it warm, at room temperature, or chilled. Consider adding a layer of butter or cream cheese. Dust with powdered sugar or drizzle a glaze made from orange juice and powdered sugar for an elegant touch.
