Dry Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • Zest of 2 oranges orange zest

Wet Ingredients

  • ½ cup milk
  • ½ cup vegetable oil
  • ¼ cup orange juice
  • 2 large eggs Room temperature
  • 2 teaspoons vanilla extract

  • cups fresh or frozen cranberries Do not thaw if using frozen

Preparation

  • Preheat your oven to 400°F (200°C).
  • Prepare your muffin pan by lining it with paper liners.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  • In a separate large bowl, combine the granulated sugar and orange zest. Mix them for about one minute.
  • Add the wet ingredients: Pour in the milk, vegetable oil, orange juice, eggs, and vanilla extract to the sugar mixture. Mix until smooth.
  • Gradually add the flour mixture to the wet ingredients, stirring gently until just combined.
  • Fold in the cranberries carefully.
  • Divide the batter among the muffin cups, filling each cup about ¾ full.

Baking

  • Bake in the preheated oven for 20-25 minutes until a toothpick inserted in the center comes out clean.
  • Cool the muffins in the pan for a few minutes before transferring to a wire rack.
