Creamy Alfredo Lasagna Soup

- 1 tablespoon olive oil
- 1 pound ground chicken or ground beef Choose your preferred protein.
- 1 small onion, diced
- 3 cloves garlic, minced
- 1/2 teaspoon Italian seasoning
- Salt, to taste
- Pepper, to taste
- 5 cups chicken broth
- 1 jar (15 oz) Alfredo sauce Use your favorite brand.
- 1 can (14.5 oz) diced tomatoes, drained
- 8-10 pieces lasagna noodles, broken into bite-sized pieces
- 1/2 cup heavy cream
- 1 1/2 cups shredded mozzarella cheese Preferably fresh.
- 1/2 cup grated Parmesan cheese Preferably freshly grated.
- Fresh parsley, chopped for garnish
- Ricotta or cottage cheese Optional topping.
Instructions
Cooking the Soup
- Heat a large pot or Dutch oven over medium heat and add olive oil.
- Add ground chicken or beef and cook until browned. Drain excess fat.
- Incorporate diced onion and cook for 3-5 minutes until softened.
- Stir in minced garlic, Italian seasoning, salt, and pepper. Simmer for a few minutes.
- Pour in chicken broth, Alfredo sauce, and drained diced tomatoes. Stir and bring to a simmer.
- Break lasagna noodles into bite-sized pieces and add to the pot. Cook for 10-12 minutes until tender.
- Lower heat and stir in heavy cream, mozzarella, and Parmesan cheese until melted and creamy.
- Adjust seasoning with more salt or pepper to taste.
- Serve garnished with fresh parsley and optional ricotta or cottage cheese.
