Ingredients
  

Pasta and Base Ingredients

  • 8 ounces fettuccine Use fresh or dried fettuccine according to preference.
  • 1 tablespoon olive oil For sautéing.
  • 1 tablespoon butter For added richness.
  • 2 cups fresh asparagus, cut into 1 1/2-inch pieces Choose bright green stalks for best flavor.
  • 1/3 cup thinly sliced shallot
  • to taste Salt and pepper For seasoning.

Mushroom and Sauce Ingredients

  • 2 cups sliced fresh mushrooms Small to medium-sized mushrooms recommended.
  • 1 1/2 teaspoons minced garlic Add towards the end of sautéing.
  • 1 teaspoon dried Italian seasoning
  • 3/4 cup heavy cream For the creamy sauce.
  • 3/4 cup grated Parmesan cheese More can be added to taste.

Instructions
 

Cooking the Pasta

  • Bring a large pot of salted water to a vigorous boil.
  • Cook the fettuccine according to the package instructions, typically around 7-10 minutes, until it’s al dente.
  • Drain the pasta, reserving a small cup of the starchy pasta water.

Preparing the Sauce

  • In a large skillet, heat the olive oil and butter over medium heat.
  • Add the asparagus and shallots to the skillet and sauté for approximately 2-3 minutes until softened.
  • Season with a pinch of salt and pepper.
  • Toss in the sliced mushrooms and cook for another 2 minutes.
  • Add minced garlic and Italian seasoning, stirring well.
  • Let this mixture cook for about 30 seconds until fragrant.
  • Pour in the heavy cream and bring the mixture to a gentle boil.
  • Stir in the grated Parmesan cheese, adjusting with reserved pasta water for desired consistency.

Combining Pasta and Sauce

  • Gently fold in the cooked fettuccine, ensuring every strand is well-coated.
  • Allow the pasta to mingle with the sauce for an additional minute.

Serving

  • Serve immediately, garnishing with extra Parmesan and black pepper if desired.
