Instructions
Heat olive oil in a large pot over medium-high heat.
Season chicken with salt and black pepper. Add to the pot and sauté until browned, about 4-5 minutes. Remove chicken and set aside.
In the same pot, add onion, red and yellow bell peppers, and celery. Sauté for 5-7 minutes until softened.
Add minced garlic, Cajun seasoning, and cayenne pepper (if using). Cook for 1 minute.
Pour in chicken broth and return the chicken to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
Add heavy cream and sweet corn. Simmer for another 5 minutes.
If desired, stir in the cornstarch slurry to thicken the soup.
Fold in cooked rice and heat through. Adjust seasoning with salt and pepper as needed.
Garnish with sliced green onions and chopped parsley before serving.
