Instructions
 

Preparation

  • Heat 2 tablespoons of olive oil in a large pot over medium heat.
  • Add the chopped onions, minced garlic, and chopped bell pepper. Sauté for 5-7 minutes until softened.
  • Add the diced chicken breast and continue sautéing for 5-8 minutes until browned.
  • Stir in the Cajun seasoning and can of diced tomatoes (juice included).
  • Pour in the chicken broth and bring to a boil. Reduce heat and let simmer for approximately 20 minutes.
  • Stir in the heavy cream and adjust seasoning with salt and pepper to taste.
  • Serve hot, garnished with chopped green onions.

Notes
