  • 2 tablespoons olive oil For sautéing onion and garlic

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onions and minced garlic, and sauté for about 3 to 5 minutes until onions are translucent.
  • Add diced potatoes and vegetable broth, stirring well.
  • Bring to a rolling boil, then reduce heat to a simmer and cook until potatoes are tender, about 15 minutes.
  • Stir in heavy cream and Cajun seasoning, mixing well to distribute the seasoning.
  • Use an immersion blender to blend the soup to your desired consistency.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with chopped green onions.

Notes

For a healthier version, substitute half of the heavy cream with coconut milk. You can also add beans or shredded chicken for extra protein.
