Preparation

  • Heat oil in a large pot over medium heat.
  • Add chopped onions, diced carrots, and diced celery; sauté for about 5 to 7 minutes until tender.
  • Add minced garlic and cook for an additional minute until fragrant.

Cooking

  • Stir in the shredded chicken and pour in the chicken broth, adding dried thyme.
  • Bring the mixture to a gentle boil.
  • Once boiling, add the potato gnocchi and cook for 2 to 3 minutes until they float.
  • Reduce heat to a simmer and stir in the heavy cream.
  • Season with salt and pepper.
  • Let simmer a few more minutes before serving hot, garnished with fresh parsley.
