Ingredients
  

Pasta Ingredients

  • 8 ounces your favorite pasta (e.g., penne, spaghetti, or rotini)

Sauce Ingredients

  • 1 cup cottage cheese Use high-quality cottage cheese for the best flavor.
  • 2 tablespoons olive oil
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried basil or a handful of fresh basil, chopped
  • 1 teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese (optional)
  • Fresh parsley for garnish Adds color and flavor.

Instructions
 

Preparation

  • Cook the pasta according to the package instructions. Once cooked, drain the pasta and set aside, reserving a cup of pasta water.
  • While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 5 minutes until softened.
  • Stir in the minced garlic and cook for another minute. Then add the cherry tomatoes and cook until softened, about 3-4 minutes.

Cooking

  • Lower the heat and add the cooked pasta to the skillet. Stir in the cottage cheese, basil, salt, and black pepper, mixing until well-coated. Use reserved pasta water if needed to adjust the sauce consistency.
  • If using, sprinkle in the grated Parmesan cheese and mix until melted.
  • Taste and adjust seasoning if necessary.

Serving

  • Serve immediately, garnished with fresh parsley.
