  • 1 pound boneless, skinless chicken breasts
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (4 ounces) green chilies
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • to taste salt and pepper
  • 1 cup heavy cream
  • to garnish fresh cilantro for garnish

Instructions
 

Preparation

  • Start by placing the boneless chicken breasts at the bottom of your crockpot.
  • Pour the drained and rinsed white beans over the chicken.
  • Sprinkle the chopped onion and minced garlic on top.
  • Add the chicken broth, green chilies, cumin, oregano, salt, and pepper.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Once cooked, shred the chicken inside the crockpot with two forks.
  • Stir in the heavy cream until fully combined.
  • Dish up the chili into bowls and garnish with fresh cilantro.
