  • 1 pound boneless, skinless chicken breasts
  • 2 cans 15 oz each white beans, drained and rinsed
  • 1 cup chicken broth
  • 1 cup diced onion
  • 1 cup corn (frozen or canned)
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup heavy cream or sour cream

Instructions
 

Preparation

  • Place the boneless, skinless chicken breasts at the bottom of the crockpot.
  • Add the drained and rinsed white beans, followed by the chicken broth.
  • Stir in the diced onion and corn, and then add the minced garlic.
  • Sprinkle in the cumin, chili powder, salt, and pepper.

Cooking

  • Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
  • After cooking, shred the chicken in the crockpot using two forks.
  • Stir in the heavy cream or sour cream and adjust the seasoning as necessary.

Serving

  • Serve hot, garnished with fresh cilantro and lime wedges, if desired.

Notes

For added flavor, use rotisserie chicken to cut down on cooking time. Experiment with vegetables or spices like diced jalapeños for a kick.
