  • 2 tablespoons olive oil For cooking
  • 1 cup chicken broth
  • 1 cup heavy cream Can substitute with coconut cream for dairy-free option
  • 3 tablespoons Dijon mustard Use good quality for best flavor
  • 1 teaspoon dried thyme
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • Fresh parsley for garnish

Preparation

  • Season the chicken breasts with salt and pepper on both sides.
  • In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 7 minutes on each side or until golden brown and cooked through. Remove the chicken and set it aside.

Cooking

  • In the same skillet, add the chopped onion and garlic, cooking until they soften and become fragrant, about 3-4 minutes.
  • Pour in the chicken broth and bring it to a simmer, scraping any browned bits from the bottom of the pan.
  • Stir in the heavy cream, Dijon mustard, and dried thyme, mixing well to combine.
  • Return the chicken to the skillet, spooning the sauce over the top. Let everything simmer for 5 minutes.
  • Adjust seasoning if necessary and garnish with fresh parsley before serving.
