Creamy Garlic Chicken Ramen

Ingredients
  

Protein

  • 2 pieces boneless, skinless chicken breasts

Broth and Base

  • 4 cups chicken broth Use high-quality or homemade for best flavor.
  • 2 cups water
  • 4 cloves garlic, minced Adjust amount according to preference.
  • 1 tablespoon olive oil For sautéing garlic.
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch, mixed with 1 tablespoon water For thickening broth.
  • 1 cup heavy cream Can use half-and-half or coconut milk for a lighter version.

Noodles and Vegetables

  • 4 servings ramen noodles Cook separately as per package instructions.
  • 1 cup chopped spinach
  • 1 cup sliced mushrooms
  • 1 small carrot, julienned
  • 2 pieces green onions, chopped

Seasoning and Garnish

  • to taste Salt and pepper
  • Sesame seeds for garnish (optional)

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add minced garlic and sauté for about one minute until fragrant.
  • Add chicken breasts into the pot and brown both sides for about 3 to 4 minutes each.
  • Pour in chicken broth and water, then bring to a simmer.

Cooking

  • Allow to cook for about 15 minutes until chicken is cooked through.
  • Remove chicken from the pot and let it rest for a few minutes before shredding it into bite-sized pieces.
  • Return shredded chicken to the pot, add soy sauce, mushrooms, and carrots, and simmer for another 5 minutes.
  • Gradually stir in the heavy cream and allow to simmer gently for about 5 more minutes.
  • Add cornstarch slurry to thicken the broth to desired consistency.
  • Stir in spinach and green onions, season with salt and pepper, and cook for an additional minute.
  • In a separate pot, cook ramen noodles according to package instructions.
  • Drain and portion noodles into bowls, ladle creamy garlic chicken broth over noodles, and garnish with sesame seeds if desired.
