  • 1 pound chicken breast Boneless, skinless
  • 1 package (16 ounces) gnocchi Store-bought
  • 4 cups chicken broth Low sodium is preferable
  • 2 cups fresh spinach Washed and roughly chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream For a richer flavor
  • to taste Salt and pepper For seasoning
  • 2 tablespoons olive oil For sautéing

Preparation

  • Gather all your fresh ingredients. Dice the onion, carrots, and celery, and mince the garlic.
  • In a large pot, pour in a generous amount of olive oil and heat it over medium heat.

Cooking

  • Add the diced onion, carrots, celery, and minced garlic to the pot. Sauté until softened, about 5-7 minutes.
  • Add the chicken breast to the pot and cook for 5-6 minutes on each side until browned.
  • Pour in the chicken broth and bring the mixture to a boil.
  • Once boiling, toss in the package of gnocchi and follow package instructions for cooking time.
  • After the gnocchi is cooked, stir in the fresh spinach and heavy cream. Allow the spinach to wilt.
  • Season to taste with salt and pepper, then gently stir to combine.
  • Let the soup simmer for a couple of minutes before serving.
