  • 1 cup vegetable broth

Preparation

  • Cook your favorite pasta according to package instructions. Reserve about 1 cup of pasta water before draining.
  • In a large mixing bowl, combine the Greek yogurt, grated Parmesan cheese, minced garlic, olive oil, vegetable broth, and lemon juice. Stir until the mixture is smooth.
  • Season with salt, pepper, and red pepper flakes if desired. Adjust seasoning to taste.
  • Add the cooked pasta to the bowl and gently toss to combine, ensuring all the pasta is well-coated with the sauce.
  • If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.
  • Serve immediately, garnished with fresh basil or parsley.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For freezing, store separately from pasta for best texture.
