  • 1 pound boneless, skinless chicken breasts
  • 2 cups cottage cheese High-protein option
  • 1 cup shredded cheese (like mozzarella or cheddar) Optional mix of different cheeses can enhance flavor
  • 1 cup chopped spinach or kale Can substitute with other vegetables
  • 1 cup chopped bell peppers
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • to taste Salt and pepper
  • Olive oil for sautéing Use for cooking the vegetables

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat a splash of olive oil over medium heat. Add the diced onion and minced garlic. Sauté for about 3-5 minutes until the onion becomes translucent.
  • Stir in the chopped bell peppers and spinach or kale. Cook for another 2-3 minutes, until the vegetables soften.
  • Season the vegetable mixture with oregano, thyme, salt, and pepper. Remove from heat and set aside.
  • In a large bowl, mix together the cottage cheese and shredded cheese until well blended.
  • Take the chicken breasts and place them in a baking dish. Spread the cottage cheese mixture over the chicken evenly.
  • Next, add the sautéed vegetables on top of the cheese layer.

Baking

  • Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  • After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the cheese is bubbly and slightly golden.
  • Remove from the oven, let it cool for a few minutes, then serve warm.

Notes

Consider using a mix of different cheeses for added richness. You can prepare it ahead of time; just add cheese for the last few minutes of baking. Adjust the vegetables according to your taste or what's in season.
