Instructions
In a large pot, heat olive oil over medium heat.
Add ground chicken and cook for 5-7 minutes, breaking it apart until browned and cooked through.
Add chopped onion and sauté for 3-4 minutes, followed by minced garlic for 1-2 more minutes until fragrant.
Return the chicken to the pot and stir in chicken broth, heavy cream, and whole milk.
Season with basil, oregano, salt, pepper, and red pepper flakes. Simmer for 10-15 minutes.
Stir in Parmesan and mozzarella cheese until melted and creamy.
Add spinach, diced carrot, and diced celery, cooking for an additional 5-7 minutes until vegetables are tender.
Serve warm, garnished with additional cheese if desired.
