Ingredients
  

  • 1 tablespoon Olive Oil
  • 1 lb Ground Chicken
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Chicken Broth
  • 1 cup Heavy Cream
  • 1 cup Whole Milk
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 0.5 cup Grated Parmesan Cheese
  • 0.5 cup Shredded Mozzarella Cheese
  • 2 cups Fresh Spinach chopped
  • 1 medium Carrot diced
  • 1 stalk Celery diced
  • 0.5 teaspoon Red Pepper Flakes optional

Instructions
 

  • In a large pot, heat olive oil over medium heat.
  • Add ground chicken and cook for 5-7 minutes, breaking it apart until browned and cooked through.
  • Add chopped onion and sauté for 3-4 minutes, followed by minced garlic for 1-2 more minutes until fragrant.
  • Return the chicken to the pot and stir in chicken broth, heavy cream, and whole milk.
  • Season with basil, oregano, salt, pepper, and red pepper flakes. Simmer for 10-15 minutes.
  • Stir in Parmesan and mozzarella cheese until melted and creamy.
  • Add spinach, diced carrot, and diced celery, cooking for an additional 5-7 minutes until vegetables are tender.
  • Serve warm, garnished with additional cheese if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat on the stove, adding broth or milk if needed.
