  • 1 lb Italian sausage (sweet or spicy) Choose quality sausage for best flavor.
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version.
  • 1 medium onion, finely chopped Builds the base flavor.
  • 4 cloves garlic, minced Sauté carefully to avoid bitterness.
  • 4 cups low-sodium chicken broth Provides the soup base.
  • 2 cups fresh spinach Adds color and nutrition.
  • 1 cup small pasta, optional Adds texture; cook according to package instructions.
  • 2 tbsp olive oil
  • Salt and pepper to taste Adjust seasonings as needed.

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté until translucent, about 4 to 5 minutes.
  • Crumble in the Italian sausage and cook for 7 to 10 minutes, until browned.
  • Stir in minced garlic and sauté for 1 minute, being careful not to burn it.

Cooking

  • Pour in the chicken broth and bring to a gentle simmer.
  • Stir in the heavy cream and allow the soup to thicken.
  • Add the fresh spinach and let it wilt in the warm broth.
  • Season with salt and pepper to taste.
  • If using, add pasta and cook according to the package instructions.

Serving

  • Serve in deep bowls, garnished with fresh herbs and parmesan cheese.
  • Pair with warm, crusty bread or a side salad.
